Banana and apple little muffins

Tomorrow is Teachers’ Day in Mexico (el día del maestro), so as a gesture of gratitude I have backed these lovely and light muffins for my son’s teachers. The yoghurt makes them very moist and so so soft!


1- Melt 40 gr of butter and set aside.
2- In a large bowl mix: one and half cup of flour, two teaspoons of baking powder, two tablespoons of brown sugar (or other natural sweetener such as honey or jam – I used strawberry jam in this recipe), two eggs and one pot of plain yoghurt (200 ml).
3- Once it is mixed add the butter and mix again. I used a hand electric mixer with the spiral fit.
4- Crush three “plátanos dominicanos” – these are the very small and sweet bananas. If you do not have any, use one large banana.
5- Cut two golden apples in very small cubes.
6- Add the crushed bananas and the apples to the mix. Pour in a muffin baking pan and bake for 25 minutes at 175º c.
