A lovely and most colourful side dish, and very easy to make.
1- Peel and cut fresh carrots in sticks or anyway you want.
2- Cook them in boiling water for about 10 minutes. They should be al dente (you can insert a fork but they do not break).
3- In a pan, place some olive oil, cumin and a little bit of brown sugar. Mix well and add the carrots on low fire. Let them cook for about 15 minutes or until they look shiny.
Serve immediately topped with fresh basil. You can substitute the basil for any herb you like such as coriander, mint or parsley.
