Strawberries are plentiful and beautiful in the market these days, so I am making the most of them.
Here a simple recipe for lovely little muffins that come out really “puffy” as my little son would say!
1- In a large bowl mix: one and half cups of sifted flour, a tablespoon of baking powder, two tablespoons of honey (or strawberry syrup, the liquid from homemade strawberry jam), two eggs and a pot of cream (200 ml). It will feel a little bit thick.
2- When well mixed, add 40 gr of cooled melted butter and two tablespoons of whole milk.
3- Add one cup of fresh strawberries sliced and mix with a large spoon.
4- Bake in a pre-heated 175º C. oven for 25 to 30 minutes.
