Fondant au chocolat

Chocolate at its best!

1- Melt 200 gr of high quality chocolate (70% cocoa content or more) in bain-marie. When the chocolate has melted, take it out of the bain-marie and add 100 of butter. Let it melt, incorporating it slowly.
2- While the chocolate is melting, in a large bowl mix thoroughly three eggs with 100 gr (half a cup) of brown sugar. Mix on high speed until the color becomes lighter.
3- Add 30 gr (a third of a cup) of sifted flour and mix again.
4- Incorporate the chocolate, mixing with a spatula until the color is uniform.
5- Place in a prepared baking dish (buttered and sprinkled with flour), and bake for 20 minutes in a low heat oven (160º C.).

Serve at room temperature with red berries.
