I have to say these are some of the most tender and tasty small potatoes I have ever made. The secret ingredient… milk!
1- In a oven baking pan mix: small potatoes cut in quarters, crushed garlic, olive oil, fresh rosemary, coarse salt, freshly ground pepper and a dash of milk. Toss well so that the potatoes are well coated.
2- Place in a 180º C. oven and bake for about 45 minutes. Mix often so that the potatoes do not stick to the pan. Serve immediately.
I served them with grilled fresh Tuna simply marinated in freshly crushed pepper and lemon juice, with a drop of extra virgin olive oil, and a salad of cucumbers, red onion, avocado and fresh mint on the side.
