Tofu Ricotta

Tofu Ricotta for when you cannot find Ricotta or even if you do. It is very healthy!
Great as a snack on toast topped with an antipasto of choice, or with pasta as I served it today for lunch.

– In a large bowl mix using a fork: 300 gr of firm Tofu (standard pack size) drained, the juice of half a lemon, one garlic clove crushed (optional), some fresh mint or basil, salt & black pepper.

It’s ready!
