Lemony pancakes

Tender pancakes with just the perfect citrus touch!


1- In a large bowl, mix: two cups of sifted flour, two teaspoons of baking powder, half a cup of heavy cream, one and half cups of milk, two eggs, a pinch of salt, a tablespoon of honey, a tablespoon of olive oil and the juice of half a lemon.
2- Let it stand for at least 15 minutes, then bake on a warm pan turning the pancakes over just once.


I served them with mango, guava and strawberries, and honey on the side.
