To inaugurate the colorful little bowls I just bought, I made what I consider as the real “mousse au chocolat”. It is made the traditional French way with few and fresh ingredients, and very little sugar. Enjoy!
- Melt one 100 gr tablet of high quality dark chocolate (at least 70% cacao content) au bain-marie.
- In the meantime, mix three egg whites very firm. Set aside.
- In another bowl mix three egg yolks with three teaspoons of brown sugar, until it is homogenous. Add one cup (200 ml) of heavy cream and mix again.
- Mix the melted chocolate with the yolk mix. Then slowly fold in the whites.
- Pour either in a large bowl, or in small ones (it makes about eight of them) and refrigerate for at least two hours.
