Mousse au chocolat

To inaugurate the colorful little bowls I just bought, I made what I consider as the real “mousse au chocolat”. It is made the traditional French way with few and fresh ingredients, and very little sugar. Enjoy!

1- Melt one 100 gr tablet of high quality dark chocolate (at least 70% cacao content) au bain-marie.
2- In the meantime, mix three egg whites very firm. Set aside.
3- In another bowl mix three egg yolks with three teaspoons of brown sugar, until it is homogenous. Add one cup (200 ml) of heavy cream and mix again.

4- Mix the melted chocolate with the yolk mix. Then slowly fold in the whites.
5- Pour either in a large bowl, or in small ones (it makes about eight of them) and refrigerate for at least two hours.

  2. Merci Kenza! Je veux essayer ce weekend. D’ailleurs j’ai fait moelleux au chocolat. Je pense que e l’ai cuit un peut trop car c’était pas très moilleux:) la prochaine fois je le cuit moins, peut être 15 min. Mais c’était très bon de toute façon. Bises à tous les deux:)
