Cardamom and apricot teacake

The secret ingredient is cardamom…


1- Mix: two cups of sifted flour, one and half teaspoon of baking powder, a pinch of salt, the seeds of seven cardamom pods, one cup of brown sugar, one cup of plain yoghurt and two beaten eggs.
2- Add about five tablespoons of melted butter.
3- Add three or four fresh apricots cut into very little cubes – do that at the very end so that the pieces don’t sink at the bottom of the cake.
4- Pour the mixture in a prepared baking pan. Bake for 50 minutes in a 180 degrees C. (350 degrees F.) oven.
