Breakfast remains the most important meal of the day for us, so I always try to make it healthy and good. Here an easy recipe for super fluffy pancakes! The secret is olive oil and cream.
And I added a few pieces of dark chocolate in some, just for fun!
1- In a large bowl mix at low then high speed, two cups of flour, two teaspoons of baking powder, half a teaspoon of salt, one tablespoon of brown sugar, two eggs, one cup of cream, one cup of milk and three tablespoons of olive oil.
2- Allow the batter to rest for 20 to 30 minutes depending on how warm is your kitchen. Until you see little bubbles forming on top.
3- Ladle a little bit on a non-stick pan. While one side is cooking, you can add a few pieces of dark chocolate. Let it cook for about three minutes on medium to low fire, turn over and let it finish cooking for less than a minute.
4- Serve with honey and fresh fruits, or just fresh fruits if you have added chocolate.
