Guayava and honey pancakes

The sweet scent of guayava! We have it almost every morning as one of the breakfast fruits. It is available all year long in Mexico.

Since it is Saturday, this morning there was guayava, mango and strawberries over delicious honey pancakes served with Mexico´s traditional “cajeta quemada” (dulce de leche), I bought in a market a few weeks ago in Guanajuato.

Here is the recipe for the about 10 pancakes.
1- Sift together one and half cup of flour, two teaspoons of baking powder and a pinch of salt.
2- Mix in a generous tablespoon of honey, one and a half cup of milk, one egg (well beaten) and two tablespoons of melted and cooled butter.
3- Let it stand 15 minutes, then cook one at a time on a warm pan turning them over only once.
